Okay, this recipe is one for the books! It seriously only requires about 5 minutes of prep time and 9 minutes in the oven, they’ll be ready to scarf in less than 20 minutes tops!
I love indulging in these cookies while pregnant, especially, because avocados provide so many healthy nutrients for you and the baby! Potassium! And, even after I eat half the batch, I don’t feel guilty because i’m getting my chocolate fix with out the processed sugars. Score!
I really love baking with Coconut Sugar, I like the texture of it and how it tastes. Now, if you’re really trying to cut back on the carb count of your macros then I’d recommend playing with the recipe and swapping the sugar for an alternative sweetener like powdered Stevia or something similar.
I love the brand Simple Truth Organic, and I buy their products at Smith’s. This brand offers many alternative baking ingredients to the regular sugars and flours you might be used to.
Whenever I bake with avocado I always make sure it’s very ripe and that it’s been sitting out at room temperature for a few hours before using it. Meaning, it’s slightly squishy on the outside, but when you pull the little brown seed off the top the avocado color is still green under it. When you cut it open the avocado should still be mostly green on the inside too, with few brown spots on the edges. This makes mashing it into your batter much easier and less time consuming!
Ingredients:
- 1 medium Avocado
- 1//2 c. Coconut Sugar
- 1 large Egg
- 1/2 c. Cocoa Powder
- 1 Tbsp. Coconut Flour
- 1/2 tsp. Baking Soda
- 1/4 c. Chocolate Chips
Instructions:
- Preheat oven to 350° F. Line a cookie sheet with Parchment paper.
- In a large bowl (I use a Kitchen Aid♥) mix together ALL ingredients.
- Mix on high until avocado is fully mashed. Dough should be very moist with a sticky texture.
- Create 12 dough balls and place on cookie sheet. Bake for 9 minutes, DON’T over bake.
- When finished baking, allow cookies to cool for 10 min. on cookie rack or tinfoil.
Macros per cookie: 1.5 g. protein, 12 g. carbs, 3 g. fat, 70 calories
Note- Substitute coconut sugar for a zero calorie/sugar sweetener like Stevia and sugar-free chocolate chips for less carbs and calories per cookie.
